The Origins of Barbagliata. A long-standing Milanese speciality. In 1859, in Piazza della Scala, in some of the old houses in front of the famous Theatre, the “Caffè dei Virtuosi” was established, and just there, manager Barbaja, the Bellini’s benefactor, created an exquisite cup of chocolate that was soon appreciated from the entire Milanese elite. So the Barbajada originated. This long-standing speciality is now part of the tradition thanks to Moretto that revisited and perfected it by means of new processing techniques.
